Orpheus & the Raven Old Bush Vine Chenin Blanc

A Chenin Blanc for those who appreciate complexity without artifice. Cedar spice and citrus open on the nose, giving way to wild honey and dried apricots. The palate is luscious and rich, with a gentle natural sweetness that comes from an incomplete wild fermentation in amphora — unforced, and all the better for it.
 
The grapes were hand-picked in the cool morning hours at an average of 23.0° Balling. A portion of the juice was wild-fermented in amphora; the remainder was inoculated and transferred to barrel. The wine underwent partial malolactic fermentation and spent twelve months in maturation vessels before bottling.
