A very gentle extraction is carried out here under anoxic conditions. After cold settling for 5–6 days at 8°C, the clear must was racked and placed in barrels to ferment with indigenous yeasts. Once fermentation is complete, the barrels are regularly stirred (batonnage), and afterwards the wine remained in new French oak barrels for a total of 12 months.
