Bibi Graetz Testamatta 2018 is made from 100% Sangiovese sourced from Vincigliata, Londa, Lamole, Montefili and Siena. The vineyards include vines up to 80 years old and are situated at different altitudes and locations across Tuscany. Individual parcels are harvested up to eight times, allowing the grapes to be picked at their optimal level of ripeness.
After a second selection at the winery, the grapes are destemmed and gently pressed. Fermentation takes place with natural indigenous yeasts in open-top 225-litre barriques, without temperature control, with six manual punch-downs per day. Following 7–10 days of maceration, the individual parcels are transferred to old barriques for approximately two years of ageing.
The 2018 vintage shows blackberry and blueberry fruit alongside earthy nuances and a subtle mineral character. The palate combines intensity with freshness, silky tannins and a long, refined finish. Bibi Graetz himself described the 2018 as one of the greatest Testamatta wines he had made.
