Château Romer du Hayot holds the status of Deuxième Cru Classé (Second Growth) in the 1855 classification of the Sauternes appellation. Located in Fargues within Sauternes/Barsac, the estate covers around 15 hectares planted primarily with Sémillon (~70 %), Sauvignon Blanc (~25 %) and a small percentage of Muscadelle (~5 %). The terroir consists of clay‑limestone and gravel soils, and the grape harvest is done by hand in successive passes to select only botrytis‑affected grapes. The wine is vinified and matured in French oak barrels, producing a sweet white wine known for moderate but focused richness rather than exuberant opulence
